The best destructibility stat is found on aramid with 0.25 - but since only irrelevant soft armors are made from aramid, the actual best material (2nd) is the ultra poly with 0.45. The worst are glass and ceramic with 0.8. the second worst is steel at 0.7.
Each material have that destructibility number, you can see it as how much armor wears when it's hit: the lower the better. A simple math is to divide the max durability of the armor by the destructibility of it's material.
Armor Materials works as a plain simple durability modifier (actually damage modifier) meaning that the durability the game shows us means absolutely nothing as long as we don't know the modifier.
