Was expecting a link of some variety to just download a fix, but there isn't something available as easily as there should be for an incredibly common software. It's OK, I just downloaded the (apparently most recent) version of iTunes that you can download, from 2020, 2 or 3 versions ago.
Go to Settings > General > Software Update > Automatic Updates. Turn on Download iOS Updates and Install iOS Updates. When an update is available, iPod touch downloads and installs the update overnight while charging and connected to Wi-Fi. You’re notified before an update is installed.
