Well with the Demilich, the gems that PC souls are trapped in can be used as part of a "free" resurrection (Replacing the 10,000gp worth of diamond dust, still uses the spell slot.) so if you have a cleric/oracle then you can hope to hell that they survive to raise the party and cast restoration a few times to get everyone else back, if a little...
Demiliches are the only creature that has this ability in the first place, so it's not like they imported this from a normal, non-flying lich and forgot to adjust it. And yes, the fly speed is specifically a fixed part of it's statblock.

Here are the ones I've got so far and the book they're from as well as a brief description. WotC Alhoon - LoM: Lichdom for illithids. Archlich - Monsters of Faerûn: Benevolent Lich.
