Elves live 300 years in my homebrew, gnomes and dwarves 200, half-elves 150, and everyone else can get 100. No 750 year old rivers for me. The longer lived races each adulthood much slower as well. What is considered adulthood need not be a biological factor.

A 1e Dwarf started adventuring in adulthood somewhere between age 50 and 150. In 2e or V3, that Dwarf would have started adventuring between the ages of 40 and 125. A 1e Drow Elf started adventuring in adulthood somewhere between the age of 100 and 400.
Dwarves also mature at the same rate as humans, but are simply considered young until age 50, kind of like how humans still consider people in their 20s to be young nowadays despite 25 year olds being physically adult.
