Food insecurity, which affects an estimated 15 million Americans (1), is the limited or uncertain availability of safe and nutritionally adequate foods, or the limited or uncertain ability to acquire acceptable foods in socially acceptable ways (2).
Food insecurity increases with rising food prices. People may begin to cope by turning to nutrient-poor but calorie-rich foods. Some people may also go hungry. The results could range from micronutrient malnutrition to obesity. The nutritional value of some foods is projected to decline.
