28 kwi 2021 · I’m curing olives using a traditional Portuguese salt and water brine method passed from my grandfather, it’s very similar to this method and the Italian methods without any vinegar. After salt brining, my grandfather canned his green olives with bay leaves, lemon, and garlic and we still have a handful of his sealed jars years later!
You can use canning jars, apothecary jars or big decanters with bales on them. Whatever works for you. In my case I find a two pound bag of olives fits well in a 64oz/1.87 liter bottle.

22 paź 2009 · Wash the olives and pick out any that are not perfect. Put half the olives in the jar. Put in the lemon slices (you can add garlic and/or fennel slices if you want, too) . Add the rest of the olives. Pour the brine to the top of the jar, just covering the olives. Top with a thin layer of olive oil. Close the jar, but do not seal.
