28 kwi 2021 · At this point you can proceed to store your olives in olive oil, or in 50:50 vinegar and water, or in a newly-made 10% brine in the cupboard for up to 6 months. Adding herbs and spices and lemon slices at this point is good.
14 lis 2021 · Completely cover the olives in the jar with the brine solution and cover it with a layer of olive oil to keep the air from reaching the olives. Seal the jar and leave it in a cool, dark place for a year! In a year, you can eat the olives as-is or further season them with spices and herbs!

2 sty 2024 · Fill all the jars with olives, brine, and some Mediterranean-like aromas (garlic, rosemary, etc.), and you can close the lids. Enjoy the taste. You can eat olives straight away, but if you add some additional flavors, you can wait another 7 days for olives to soak all that Mediterranean aromas.
22 paź 2009 · Put in the lemon slices (you can add garlic and/or fennel slices if you want, too) . Add the rest of the olives. Pour the brine to the top of the jar, just covering the olives. Top with a thin layer of olive oil. Close the jar, but do not seal. I use a baggie and put the closure over that.
