The only time I ever really notice any benefit from armor is when I stack specific pieces of armor to counter one specific damage type like fire or poison. I will say that I've never really gotten any benefit from trying to resist raw physical damage using armor though even when stacking armors.

There are only two cases in which you'd want to change armor sets for mechanical reasons. One is if your set has one really low resistance and a particular boss deals that kind of damage, which is pretty rare.
