I wanted to make a casting character that does a ton of consistent damage. What are some of the best ways to do that in 5e? I've thought about going standard evocation wizard or Red draconic sorcerer, as well as 2 warlock X sorcerer for quicken eldritch blasting.

Straight up - Level 20 Forge Cleric. Nothing is better in an “areana” IMO. I recommend getting the “Resiliant: CON” feat, “War Caster” and taking ASI’s to get to 20 Wis and Con. Animate a handful of coins, (or daggers) using animate objects - gets you 10 tiny objects at the cost of concentration.
