Paladin is for armor and smiting things! For eldritch blast dmg, imo the best build is going sorclock. you get access to twinned eldritch blasts, or quickened eldritch blasts aswell as haste for even more eldritch blasts. You could either go 4warlock/8sorc or 2 warlock / 10 sorc.
Githyanki get access to Soulshatter Greatsword, which gives +2 innit. 14 dex gives you room to not tank your Wisdom saving throws, still fills out capped medium armor, and STR tends to be a very good stat for melee builds on account of Athletics being heavily used for shove and throw defense.

A Short Rest restores their spell slots, allowing them to take two each day instead of one, and they can cast fewer spells than other spell-users in Baldur’s Gate 3 before needing a Long Rest.
