The best Game of Thrones mod for any game is probably the CK2 Game of Thrones mod, which has its own community in r/CK2GameOfthrones. The best Total War one is probably Seven Kingdoms: Total War (at least that's the one I know of since Kings and Generals uses it for their machinima), which is for Attila: Total War .
