Endurance Charges, Resistances, Spell Suppression, and Progenesis are defensive layers that mitigate damage in Path of Exile. Mitigation reduces the damage you take.
Flesh and Stone (sand stance for blind), immortal call (25%-34% less physical/elemental dmg taken), VMS/Molten Shell if you have alot of armor. Even for dodge based char, cwdt-phase run-immortal call is a good setup. I like using Steelskin linked with Empower and Increased Duration Support.
Evasion is go to for attack damage avoidance, and spell dodge is now weak compared to its new progenitor, spell suppress, which can effectively add 55%+ damage mitigation for all spell damage, which is generally better than the 75% avoidance that spell dodge maces at.
The easiest defence to run right now is just pure armour + max res. Relatively braindead and passive, with no real adjustment in your play needed. The strongest defence is arguably armour + evasion, which opens up a lot of possibilities. EV bases grant access to spell suppression which needs investment but is ridiculously strong at 100%.

It's the combination of many layers of defence that makes a character feel immortal. The more layers and defensive mechanics you add, the more return you'll get for each of them.
