The joke is that the letter "8" sounds much like the unrelated word "ate". So if you count 7 8 9, it sounds the same as 7 ate 9 which is used in a rather humorous way that implies 9 was cannibalized by the number 7 which wa sibserve day 6, hence 6 being afraid of 7.
