I got the Best Buy one (i7-11800h, 360hz FHD, 16GB, 1TB Gen3, 3070) as it is the only apparently in stock right now, and I had some of the same questions you do. I just did the first round of upgrades, RAM, and my SSD stuff will arrive soon. My recommendation is to get the fastest RAM @ 1.2v you can find.
