While BG3 doesn't give you a full Necro class, you can select Wizard and use the "Necromancy" subclass to make up for it and come up with a pretty good Necro build. Managed to get 10 summons (2 Flying Ghouls, Elemental, Mummy, Azer, 5 Ghouls).
