Normy ISO określają wymagania dotyczące jakości produktów, świadczenia usług, a także systemów zarządzania i związanych z nimi procesów, m.in. w dziedzinie technologii, produkcji, środowiska, bezpieczeństwa i higieny pracy, medycyny, zgodności z przepisami oraz bezpieczeństwa żywności.
