1 maj 2023 · Beans can be found in one of three ways: fresh, canned, and dried. Each option requires not just different storage and preparation requirements, but ultimately boasts different textures and flavors. Fresh beans are often found seasonally since canned and dried varieties are offered year-round.
2 kwi 2024 · Split peas are “field peas,” which are green or yellow peas that are allowed to mature in the pod and are specifically suited for drying. Like other split legumes (see red lentils), they are quick-cooking and don’t need to be presoaked like other dried beans.
Cooking times vary with the variety, age and size of beans; generally you’re looking at about 1 to 2 hours. For Peas and Lentils: Sort and rinse dried peas and lentils as you would dried beans (see above). Then simply bring 1½ cups water or stock to a boil for each cup of dried lentils or peas.

Usually you should soak dried beans and peas in cold water for about 12 hours to fully re-hydrate them before use. If you’re in a hurry, simply put your beans or peas into a large saucepan with plenty of cold water.
Method. Heat the oil in a saucepan over a medium heat. Add the shallot, pepper and garlic and cook for 4–5 minutes until softened. Add the chopped tomatoes and season with salt and pepper.
