After some troubleshooting I found out the problem was the HDR. If you disable HDR10 in the console settings it fixes at least the crashes till an update is out. If this fix is working for you, spread the word! Let Microsoft know so it gets fixed faster!

I bought a Series X yesterday, and whenever I try to launch a game, it crashes before I get to play it. It occasionally reboots the entire system, though it's rare. And sometimes it brings me a white screen before crashing.
Clear cache: Try clearing the cache on your Xbox Series X. To do this, hold down the power button on the front of the console until it turns off. Then, unplug the power cable from the back of the console and wait for 10 seconds before plugging it back in and turning on the console.

Thinking there was an error in setup when importing old Xbox settings from my Xbox One, I went through console setup again and started "fresh" with options and ignored previous account preferences. I reinstalled all games and still had an issue with crashing.
