There is a simple fix. Go into settings on the main screen and Video. Disable all output resolutions: 1080i, 720p and 480p. Back out to the main menu and try the game. It worked for me when I did this. I am planning on leaving my Xbox with all resolutions disabled unless I am playing a game that supports 480p or 720p.
