The Trichinae Certification Program is a pre-harvest pork safety program that will provide documentation of swine management practices which minimize risk of exposure of swine to the zoonotic parasite Trichinella spiralis.
FSIS developed this compliance guideline to assist establishments, particularly small and very small establishments, understand the available options that are effective for the prevention and control of Trichinella spiralis and other parasitic hazards, specifically, Toxoplasma gondii, in ready-to-eat (RTE) and not-ready-to-eat (NRTE) pork products.
