For the sake of time, I'm going to focus on the art of Zelda 1 as an example since it's the one I've done the deepest dive in. The original Hyrule Historia contains concept art and other development materials from across the series (pp 138-227).

Historia is definitely the best. Has a nice mix of the history and lore of the games, artwork, and development notes. I have a soft spot for Artifacts because it's fun going back and looking at artwork from the games box art and manuals, plus seeing US and JP differences. The Encyclopedia belongs in the trash. 1.
