Just stick one in and wait, do the fish quests, and then when your blue discus pond has a population of 9+ you indeed have the chance to get golden coconuts... and that's honestly the only way to do it.

Now, on my first farm in 1.6, I have only one pond with sturgeons, and indeed I noticed a decrease in regularity over a long time. BUT.

There's no way to fill a fish pond that is going to get you the same profit per tile, per day, as 24 tiles of crops. From a money-only standpoint, no, fish ponds just are not profitable. However, they have many other benefits!
24 lis 2020 · Blobfish- farm totems, pearl. Woodskips- maple seed, acorn, pinecone, wood, hardwood (I think it's so cute) Stonefish- copper ore, stone, geodes. Spookfish- treasure chest. None are really best, because it takes a whole 25 tiles, and you'd make better money putting an iridium sprinkler and crops.

I fished out all the carps and tried to put a largemouth bass into it. I received the message "a largemouth bass doesn't want to go to carp pond" - but there are no carps in a pond.
