As long as you update bills regularly, most online billers will eventually provide a pdf of the bill. There is no notification when it downloads so you need to keep checking in the pdf window for the account. I personally prefer to download the bill directly from the biller web site and store it separately.
With online account access, you can update (download) transactions and balances from your financial institution or credit card provider into Quicken. Then you can see what transactions have cleared your account, find out your current balance, and add transactions that have been processed but aren't in Quicken yet.
