If they were killing Joffrey to prevent him from harming Margaery and they were counting on Sansa to bring the poison, what would happen if Sansa didn’t show up?
Margaery, of course, smiling sweetly as she and Joffrey shared a drink from the great seven-sided wedding chalice. Littlefinger, by the way, never claims to have poisoned the wine. Sansa deduces it, because she thought it must be the wine.
I think the best theory is that there were two separate murder plots at the Purple Wedding; 1.) Littlefinger and Olenna planned to poison Joffrey's pie with a slower poison resulting in his death later on in the evening.
