if the game can't see its user data, it's because the folder that contains it is not where it should be, and hence can't be recognised. the game will only read from Documents, and will always store user data there.
to use mods, you always need to add them to the user data folder. by default, the game creates this in local Documents, or you might find an Electronic Arts folder in the OneDrive equivalent if you're using that to sync.
the only place the saves folder should be in is documents -> electronic arts -> the sims 4. not on the desktop, not in icloud. you don't need to rename anything at all, as the .ver files are simply your older backups. the main ones (or most recent) end with .save
if your mods do show up, they're in the right subfolder. make sure the main path is the same for the saves (by default documents / electronic arts / the sims 4). if you still don't see them, try creating a new save so you get the 'load game' button on the main menu. then go there, see if your other saves show up as thumbnails.
Move the save file from your cloud drive to your Sims 4 folder on your computer. That should make them reappear in game! It also may not be a problem with your computer or iCloud Drive, as some game updates have been known to cause problems with losing save files.
You'll want to disable game saving to the cloud, and go to your cloud service, download the Sims 4 files and pop them back in your Sims 4 folder. Alternatively I did have any issue where the game changed location of where it saved on my computer randomly.
