First back up any OMODs from OBMM if they're outside of your data folder. Back up your \Data\ folder. If you haven't modified your BSA files (and unless you knew what you were doing, you almost certainly haven't) then you can omit those from the archive because they are replaced with a new install.
If you can, locate the saved game file in its folder, try Right Click on the file and select Previous Version tab. If there's dates listed you can revert the file back to the date you choose and hopefully that will allow you to load your game.
If you used Steam delete your data folder and tell it to check the integrity of local files. It will download all the files the game is missing. Not sure exactly what your goal is... when you start the game launcher just click Data files and choose what mods to load.

This grey screen bug is most likely due to an issue with the shaders, which you restore with the original ones here [www.nexusmods.com]. This can arise from using the big graphical overhauls/updates like OBGE or custom tweaking.
A solution someone said worked was to disable OneDrive sync for oblivion and to make sure your saves are in the default save location, [C:\Users\User\Documents\My Games\Oblivion\Saves], and make sure the .ini reflects that.
