The solution was replacing the HDMI cable for my second monitor. I'm using wifi on my PC and apparently the old HDMI cable was probably causing interference. When I switched to a new HDMI cable (which seemed thicker and more shielded) I could use the second monitor without losing any speed on my download.
To get better performance you want to change your wireless channels on the 2.4GHz on your AP/Router to maybe something less busy. It’s a really busy frequency, especially if you have people close to you (I.e an apartment/condo) or assholes assigning their 2.4GHz radio with 40MHz width and blasting it at full power.
