A 5w-20 is going to be less viscous than your 10w-40, at any given temperature. Getting the colder thermostats is going to drop your oil temperatures across the board, not just at the peak. So a lower thermostat temperature effectively has the same effect as increasing the thickness of your oil.

Mocal inline oil thermostats are fitted into oil lines between the engine and the oil cooler. The oil thermostat diverts oil from the cooler until the oil reaches 80°C. Mocal oil sandwich plate with built in thermostat.
The thermostat works just like the one in your engines water system, only that it restricts the amount of cold oil that goes to the cooler until it reaches its set opening temperature. When the oil reaches 80°C, it will begin to open the thermostat and the oil can then flow freely to the oil cooler.
