I'm having issues with the string farm. I seriously cannot find anywhere on the internet how to "cut" the string with the shears, right clicking does nothing and left clicking just breaks the string.

By using Tripwire Hook, String, Flowing Water, Lever with appropriate setup in Vanilla Single player world (or servers), Strings can be duplicate to unlimited numbers. Observed/Actual behavior. Folia server cannot do the duping in version ef2c697.

9 kwi 2024 · String duping has been fixed by paper but they recently added a config option to re enable it. You seem to have a version that is too outdated so I suggest you to update and try again.
It's manual because despensers can't place string (insert annoyed eyeroll here). You can use a button into redstone repeater to invert the signal through a redstone torch. Then the inverted signal to the trapdoor.
