Heat the oven to 400. Cut the sweet potatoes into sticks 1/2 inch wide and 3 inches long, and toss them with the oil.
I make sweet potato fries all the time with just a tablespoon of evoo, salt and pepper. I bake them at 200c for 30 minutes or until carmelized without turning. They are delicious.
