Used similar bottles, they seal just fine. But you'll want to pasteurize and fill the bottles hot if you want them shelf stable with no refrigeration. PH should be fine if you are doing fermented hot sauce, if not you should lower the pH below 4.5 as well.

As far as actual sauces, Secret Aardvark's habanero sauce is my favorite. It focuses a lot more on the flavor side of things versus just adding heat. My favorite hot sauce is Cholula. Litesmith for containers. You could repackage airplane liquor bottles. Fill a Woodford Reserve 50ml airplane bottle.

Personally I don't like the standard 5oz tall and skinny hot sauce bottles. Solids get stuck in the neck and it can be annoying cleaning that out. I haven't had that issue with the bottles that Tia Lupita uses. I think a wider mouth helps too, and it makes sure the consistency of the sauce that's poured is the same every time.
