Most of it is not very useful to the average person, but you can make it show you your phone's actual signal strength instead of just how many bars you're getting.
By doing the following, all you need to do is tap on your service bars and it will toggle between the numerical strength and the bars (or dots for iOS 7). Open the phone app and type this: *3001#12345#*. Have a look through the different options / settings if you like.
