Go with the Ryzen 5 5500U since it has 6 cores. And MAKE SURE that the laptop has 16GB of ram or at least 8GB with upgradable ram. and a SSD too.
If the Ryzen was a 5700U, I'd recommend that, but the i5 has only two less cores than the 5500U and has better single threaded performance, making using the laptop snappy. The Iris Xe has similar performance but drivers have been hit or miss with some games.
