First add the main shape (or base layer I like to call it) of the outline you want the shape to be. For instance, if in the end you want to outline to be a square or circle, you need to add that shape first.
Use a sharp knife to cut the cheese into slices that are about ¼ inch thick. Then, stack the slices and cut them into strips of the same thickness. Finally, cut the strips into cubes by cutting perpendicular to the strips. This technique will ensure that you get evenly sized cubes that look great on a cheese platter or in a dish. Round and Square cheeses can be cut in wedges and slices. Pyramid or Cone-shaped cheese can be cut into wedges that start from the top-center point of the cheese. Block cheeses can be cut into small rectangular pieces or long slices.
