In Outlook, choose File > Account Settings > Account Settings. Select the email account that you want to change, and then choose Change. If the account Type is Microsoft Exchange, contact your Exchange administrator to make the name change. You can change your name on the Account Settings screen.
I’m using the new outlook for Mac. And I’m having an IMAP account. Previously (the normal/old outlook) allowed me to change my display name (e.g. First Name Last Name), the new outlook doesn’t allow me to do so so that my display name is always my email address what I don’t want.
