The GTX 1080 is overkill for the streaming PC. Sell it and get a smaller GPU and a 1080p144 capable capture card, for example the Avermedia Livegamer 4K or you won't have fun getting your 144 Hz display into your streaming PC.

I use a 1080ti and it's a powerhouse. No reason to even go 2000 series. The 2080 and 1080ti spec out virtually the same. Only the 2080ti is a better card however the 2000 series cards have better NVEC encoding chips. A 2060 has a better encoding chip than your 1080ti and it's much cheaper.
