Update your Gevey All in One Sim. Select an appropriate network from the list of available or enter a desired carrier's MCC and MNC codes and press "Apply Settings" button. Insert Gevey All in One card with your sim into the phone and wait for the carrier's name to appear where appropriate.
Emergency calls don't require a SIM card, 112 calls connect to local emergency numbers (part of the GSM standard), that's how Gevey Sims get on the network. I found this with a quick search, looks like they updated the method but you have to jailbreak.

A Geveycard is a type of SIM interposer that is used to unlock carrier-locked iPhones. It works by tricking the iPhone into thinking that it is using a SIM card from the carrier that the phone is locked to, when in fact it is using a different SIM card from another carrier.
