Vinegars of 5 percent acidity (50 grain) or more are recommended for water bath canning (and for the Fowlers Vacola method). Most recipes will state either white vinegar or cider vinegar.
Rice vinegar can provide a milder taste, too: but make sure that it’s 5% or higher (it’s often bottled to 4% or less), and, you want unseasoned, not the seasoned which has salt and sugar added to it.
