Open the launcher and uninstall the game (if necessary). Start the installation process, choosing the desired folder location (not the COPY one). Once it starts downloading, cancel the installation and fully close the launcher again. Go to your manifests folder - this is probably C:\ProgramData\Epic\EpicGamesLauncher\Data\Manifests.
These are the steps I took after installing the launcher: Hit the 'Install' button on the launcher, and select the location you want to install ('C:/Program Files/Epic Games' in your case).
