Component video is a color-difference video format which carries the splitting-out of information one step further. Instead of two cables like s-video, component video uses three. These are Y (Luminance again, along with the sync pulses), Pb (Blue minus Luminance), and Pr (Red minus Luminance).

S-video is a Y signal and C signal. Component is a Y signal, Pb signal, and Pr signal. The C is split into Pb and Pr when using s-video. As long as that is calibrated, then there is little difference.
Component video is a multiscan format, which is to say that it may be delivered, unlike composite or s-video, in however many lines and at whatever frame rate one wishes, in either interlaced or progressive scan modes.
