Sounds like you're describing a "play by post" game. I've been in a few and run my own. We play on discord with a dedicated server to it, with separate channels for things like dice rolling (using a dice bot), general chat where most RP is done, and private chats between me and my individual players.
You'll be looking for the "PBP" tag; these games are typically held on Discord, although they're still text only. There's also a way higher number of people wanting to be players than wanting to DM, so I recommend keeping lfg open on a tab and refreshing it every few hours so you don't miss the party.
