28 kwi 2021 · I’m curing olives using a traditional Portuguese salt and water brine method passed from my grandfather, it’s very similar to this method and the Italian methods without any vinegar. After salt brining, my grandfather canned his green olives with bay leaves, lemon, and garlic and we still have a handful of his sealed jars years later!
2 lis 2011 · Question – so I have a water-bath canned artichoke recipe from what look like a reliable source (Eugenia Bone’s book) that calls for 3 cups acid (vinegar + lemon) and 1 cup olive oil. I want to omit the oil entirely – would the proper thing to do be to replace that liquid with more acid?

Add the olive mixture and fill the jar with oil until the olives are covered. Close the jar well and put it in the fridge. Shake the jar now and then.
