Makes a little more than four 1/2-pint jars. 7 and 1/2 cups ripe autumn olive berries. 3 cups water. 2 unpeeled, under-ripe apples (preferably McIntosh – see above), cored and chopped, to add a natural source of pectin. 1 and 1/2 tbsp lemon juice. 2 cups sugar.
