28 kwi 2021 · I’m curing olives using a traditional Portuguese salt and water brine method passed from my grandfather, it’s very similar to this method and the Italian methods without any vinegar. After salt brining, my grandfather canned his green olives with bay leaves, lemon, and garlic and we still have a handful of his sealed jars years later!
18 lis 2017 · Fill the canning jars with washed olives up to about ½ inch from the top. Insert flavoring items to taste, such as a clove of garlic, a sprig of rosemary, a piece of lemon rind, or a slice of jalapeño. Heat a 1 to 1 mix of a light salt brine and red wine vinegar almost to boiling.

You can use canning jars, apothecary jars or big decanters with bales on them. Whatever works for you. In my case I find a two pound bag of olives fits well in a 64oz/1.87 liter bottle.
