Optionally, choose “Black Ink Only” next to the Grayscale Mode option. Now choose “Print” as usual to print the chosen document in black and white.

Ok, I finally found the settings how to print in black and white (or rather grayscale) in OSX Catalina 10.15.7 after reinstalling the printer drivers. But it might have been there all the time... Click the roll down menu below Orientation > Choose "Quality & Media" > The checkbox for Grayscale Printing should be in the bottom below "Print Quality".
