It is possible, though difficult, to fill up a Kindle. But all you’d have to do is remove some books from your device.
The Cloud Drive you're seeing in the Docs app is, indeed, your Amazon Drive, which is linked above. Every Amazon account receives 5GB free. The Docs app will only display things it recognizes as "Docs," so you may have lots of things in your Amazon Drive that you can't see there.
