From Rome just take a train to Naples. For Dubrovnik take a low cost carrier. Flights into Italy are generally cheapest to Rome and Milan. To get to Amalfi it's just a quick flight to Naples or a long train day. To reach Croatia, you could fly to Zagreb then train to Dubrovnik.
Once you get a couple of weeks into the year the prices drop bigtime. I would try Brussels and Amsterdam. I would also try a few random cities and see if the price drops, kind of the rope a dope method. Like with funky connections you might end up with a deal to Milan or Rome or Zagreb.
