If it is your scenario, you can try to add a shared mailbox as an additional account in Outlook, go to File > add account, enter shared mailbox address and password, after it added into your Outlook, then click new email, check if it sends default from the shared mailbox address.
Select File > Account Settings > Account Settings. From the list of accounts on the Email tab, select the account you want to use as the default account. Select Set as Default > Close. Always use the default email account for sending new email.

Go to Start and open Mail. Under the Account menu on the left, select your account. If your Junk Email folder isn't listed under Folders, select More. If you locate the missing message in your Junk Email folder, right-click the message and select Move to Inbox.
Click From in the message, and change to the shared email address. If you don't see your shared email address, choose Other email address and then type in the shared email address. Finish typing your message, then choose Send.

Because a shared account is a secondary account in your profile, Outlook won’t use that address by default when viewing the mailbox.
