If you have specific dates and can be flexible about destination, on the same google flights website put in your departure airport, departure and return dates, and for destination put 'anywhere' then search. Zoom in to europe on the map and look for the most affordable destinations.

I go on Google flights in incognito then click “Explore” and select “1 week trip” in “the next 6 months”. Then you can click on the map view and look around to see the cheapest flights for any city.
Google Flights is a great way to compare dates and prices from multiple airlines. August is the peak travel season in Europe. Avoid. Sometimes it also ends up being cheaper to buy a one-way ticket from one place and an outgoing ticket from another location.
