The best trick is the "island hopping" method. Don't worry about getting a direct flight to your destination. Just take the cheapest direct flight to anywhere in Europe. From there, take a low-cost flight to your final destination.
Check flights to Madrid, London or Amsterdam. Should not be that expensive from Canada. I regularly see flights in the 300 to 400 Euro range to Toronto.
Google flights is the best site and the explore option is great. You can also look at date ranges and get notifications on price changes. It’s a grind, I’ve been looking for something similar but to Asia and prices are insanely high right now.

I booked 1-way Rome to TN in November for 19K points. It’s gone up to 21.5k now so looks like I got in at a good time. We booked RDU to LHR in Oct for 19k one way. Round trip Copenhagen this summer in August for 40k total. I think one leg was 20.5 and the other is 19.5.
